As a Chef, my mission is to present a well-balanced and health promoting cuisine in the French tradition of rustic homemade elegant cooking. My meals are full of colors and flavors. They feature primarily whole foods and the produce comes from local organic/pesticide free farmers.
To be a chef is to pair and highlight what is already there. Therefore, ingredient sourcing is highly important. Outside of the kitchen, a lot of my time is spent learning about new produce, new herbs, spices and also new health benefits of certain ingredients, and detriments of some others. As an example, I am familiar with Ayurvedic principles for good health and seek to learn more any chance I get.
Moreover, I have built tight relationships with local producers supporting my mission as a Chef and I intend to give them credit. Each vegan dish coming out of my kitchen is a celebration of their skill set and dedication. Let us worry less about how to mimic and extensively process ingredients and instead let’s intend to take time to truly rethink the extraordinary possibilities of vegan cooking.
Veganism is a celebration of the Earth’s treasures and these are enough to be the focal point of a cuisine. Traveling the world, I have met extraordinary vegan creators, producers and artists. My cuisine is an ode to their talent. Vegan artistry is what I live for!
